Chocolate Mousse and Flourless Chocolate Cake

1/2 lb (250 grams) Chocolate
1/4 lb (120 grams) Butter
1/4 cup (60 grams) Sugar
8 Eggs, Separated

*If you have a scale at home and are able to weigh in grams, it will produce a more precise result.

Step 1: Using a mixer, whip the egg yolks and half of the sugar on high speed for about 6-8 minutes. While the egg yolks are being whipped, move onto step 2.

Step 2: Melt the butter and chocolate together in a bowl over a double boiler (boiling water in a saucepan). It can also be melted in a microwave on low temperature.

Step 3: Once the chocolate and butter have been melted and the egg yolks whipped, mix both together.

Step 4: Whip the egg whites to stiff peaks. Once stiff peaks have been formed, incorporate other half of sugar.

Step 5: Using a rubber spatula, fold the egg whites into the chocolate mixture, as Vincent does. Do not whisk, as the egg whites will collapse. Refrigerate for at least 2 hours, then serve.

To create the flourless chocolate cake, place the mousse in a mold and bake at 300°F to 325°F for 5-6 minutes. Depending on the size of your mold, this time will vary.
