Three Cheese Tartine

Ingredients for Basil Pesto:

1 lb Fresh Basil, washed thoroughly
1 head Garlic, divided into individual cloves and peeled
1/2 cup Olive Oil
1/4 cup Pine Nuts

Ingredients for the Tartine:

1 loaf Rustic Bread
1/2 to 3/4 cup Basil Pesto (see above)
1 cup Shredded Mozzarella Cheese
6 slices Brie Cheese
4 oz Crumbled Bleu Cheese
1 tablespoon Olive Oil
3 to 4 medium Tomatoes, sliced
1/4 cup Fresh Basil, diced

For pesto, place pine nuts on a baking sheet and toast under the broiler for 2 to 3 minutes, or until golden brown. Shake the pan after the nuts have been cooking for about 1 1/2 minutes to allow them to brown evenly. Strip the basil leaves from the stems and place the leaves in a food processor or blender. Add the toasted pine nuts, the garlic cloves and the oil. Puree the ingredients for about 2 minutes until the mixture is smooth.

For tartine, preheat oven to 375 degrees. Cut loaf down center into two large slices. Spread basil pesto on sliced side. Top with the three cheeses. Layer sliced tomatoes and drizzle with olive oil. Place on a baking sheet and cook at 375 degrees until cheese starts to melt and turn golden, about 20 to 30 minutes. Remove from oven. Sprinkle diced basil on top, cut into pieces and serve warm.

Makes 10 to 12 servings.
